Color shift/lighter and darker shift????

I've noticed when I take pictures on my camera (it's a canon r6 mark ii btw mirrorless) the live view on the screen doesn't always match the picture on the camera after ive taken it as in the color color will shift a bit and/or certain parts of the picture will be a bit brighter or darker. I've been told for the color part. I've been told it's my white balance, but my problem with that is my wb was setting not on auto. I've also been told that for the color and light and darker thing, it's because the screen isn't always super accurate to the final picture as in the screen is your general idea of the exposure then it puts in all the data once the picture is taken. Sorry if this doesn't make sense.

My possible theories on what could be happening.

The screen doesn't always pick up the things the camera does once the pictures taken as in the screen is the general exposure, then it puts in all the data after the pictures taken.

The cameras freezing the moment in time, whereas the screen is like a video where we can see it live instead of what was going on in that second of the picture (light contrast, ect.)

On the screen, it looks a bit cooler than I take the picture, and it looks a bit cooler. Is that just the data and stuff being put in after the picture is taken? Is that just how the camera works?

I would take the picture, and it would brighten the edges or something like that and bit.

Could be the kit lens.
